Ingredients
- 4 slices rustic Italian bread
- 2–3 ripe tomatoes, diced
- 1 garlic clove, peeled
- A handful of fresh basil leaves, torn
- Extra virgin olive oil
Method
- Toast the bread until golden, then rub each slice with the garlic clove.
- In a bowl, mix tomatoes with olive oil, salt, pepper and basil.
- Spoon generously over the toasted bread.
