Ingredients
- ½ cucumber, grated
- 250g Greek yoghurt
- 1 clove garlic, finely grated or crushed
- 1 tablespoon olive oil
- 1 teaspoon white wine vinegar or lemon juice
- A handful of fresh dill or mint (optional)
- Salt to taste
Method
- Squeeze the grated cucumber in a clean tea towel to remove excess water.
- In a bowl, mix the yoghurt, garlic, olive oil, vinegar or lemon juice, and herbs if using.
- Stir in the cucumber and season with salt to taste.
- Chill before serving with warm pitta, grilled meats or vegetables.
